You know the world remains upside down when Chuck Woolery’s conspiracy theory has entered our news narrative. But even bigger news is that bars as well as a lot of other places in California are shut down again, so back we go to some fun COVID shelter-at-home cocktails!
This is a fruity summer variation on a classic Moscow Mule - sweet blackberry syrup and lime juice give it a good refreshing twist, mixed with our Tahoe Blue Vodka. Garnish with mint (aren’t you glad you planted that earlier this summer?) and more blackberries, and this one is a sunset hit.
makes two drinks
Ingredients
For the Blackberry Syrup
1 cup fresh blackberries
5 tbsp sugar
¼ cup water
For the Moscow Mule
1 cup ginger beer
½ cup vodka
1 fl oz freshly squeezed lime juice
1 fl oz blackberry syrup
mint leaves, for garnish
ice
Preparation
In a small saucepan, place the blackberries, sugar, and water and cook at medium heat for about 10 minutes. Crush the blackberries while they are cooking and stir occasionally.
Remove from heat and pass mixture through a strainer. Let the blackberry mixture cool at room temperature. Reserve. (and I am using what solid is left in my strainer to put over vanilla ice cream later!)
In a small pitcher, combine ginger beer, vodka, lime juice, and blackberry syrup. Stir to combine.
Add ice to two copper mugs and add the cocktail mixture. Garnish with mint and fresh blackberries.
