Cheese Savories

Contributing editor in Ponte Vedra (my mom) has submitted this idea. Gammy's Cheese Savories. Easy to make and you definitely have these ingredients. Gammy made with sharp cheddar, but you can use any cheese you have. I even have seen a recipe using Brie. Another little snack that again, goes well with a glass of wine during a Zoom cocktail party.




Ingredients

  • 1/2 cup sharp cheddar cheese

  • 1/4 butter

  • 1/2 cup sifted flour

  • 1/8 t salt

  • Paprika and flaky salt to taste



Preparation

  • Preheat oven to 400˚

  • Have cheese at room temperature

  • In a processor with a steel blade, add cheese and butter, and cream

  • Add sifted flour and salt and pulse until flour is incorporated

  • Remove dough from processor and form into teaspoon sized balls

  • Place on baking sheet lined with parchment paper

  • Sprinkle with paprika (optional) and flaky salt. At this point can be frozen and baked later

  • Bake for 8 to 10 minutes



Option: I chose to freeze half the dough in a log wrapped in plastic wrap for about 15 minutes to get it firm. I then sliced discs a little smaller than 1/4” thick. I like both shapes, but I think you get more out of the slicing method.
