Cinnamon Baked Doughnuts


Who knew a baked doughnut could be this good! I have never doubted it.


This is another great little Zoom snack break - small and tasty. And if you don’t have a doughnut pan, that’s okay because you can make doughnut holes in a mini muffin pan - still good and will make your fellow sheltering companions happy.



Ingredients


  • 2 cups all-purpose flour

  • 1 1/2 cups sugar

  • 2 teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon kosher salt

  • 1 large egg, lightly beaten

  • 1 1/4 cups whole milk

  • 2 tablespoons unsalted butter, melted

  • 2 teaspoons vanilla extract


Topping

  • 8 tablespoons unsalted butter

  • 1/2 cup sugar

  • 1/2 teaspoon ground cinnamon




Preparation

  • Preheat oven to 350˚. Grease doughnut pans.

  • In a large bowl, sift and combine dry ingredients.

  • In a small bowl, whisk together egg, milk, butter and vanilla.

  • Stir the wet into the dry until just combined.

  • Spoon the batter into the baking pans until 2/3 filled. Bake for 15 minutes and check to see if done - may need more (or less) time based on the size of your doughnut pan.

  • For the topping, melt the butter and place in small bowl. Combine the sugar and cinnamon in another bowl. When done, dip top of each doughnut in butter and then the cinnamon sugar mixture.
