Fig Dark and Stormy

It is fall! Leaves in New England are beginning to glow orangey red and out in the West there has been a little dusting during the past couple of days. The season is moving along.




So, it is time to add an autumn twist to a classic cocktail. In Northern California, it is still high fig season, and they are just beautiful. Add a bit of fig preserves to the base of this classic to add some rich autumn flavor.



Pomfret, VT



Ingredients

  • 2 ounces dark Rum, Goslings Black Seal Rum preferred

  • 1 tablespoon fig preserves

  • 1 ounce fresh lemon juice

  • 3 ounces ginger beer

  • Fresh figs and thyme, for garnish



Preparation

Pour the rum, fig preserves, and lemon juice into a shaker filled with ice. Shake until the drink is thoroughly chilled, about 20 seconds. Strain into a double old-fashioned glass filled with ice. Top with a splash of ginger beer and garnish with a slice of fig and sprig of thyme.
