This cocktail comes recommended from my North Carolina family. This is a rum sour drink that hails from the Lyford Cay Club in New Providence, Bahamas. The egg white gives it a rich texture as well as a foamy cap - DO NOT stir the drink and ruin the float!
Makes two drinks
Ingredients
2 1/2 oz light rum
2 1/2 oz fresh squeezed lemon juice
1 1/2 oz egg white
2 tsp sugar (or a splash of simple syrup)
1 oz dark rum (Meyer’s Jamaican Rum)
Preparation
Add the light rum, egg white, lemon juice and sugar to a shaker with ice, and shake until well-chilled.
Strain into a highball glass over fresh ice.
Gently pour 1/2 oz (+) of dark rum on top of each to create the float.
