This makes it worth adding mango to your instacart list! I have only a few of the ingredients right now but I have avocados that need to be used up! I love the kick of cilantro in most anything. But some people, like my mom, can't stand the taste of cilantro. That is something I will never understand. So always think twice on cilantro - know your eating audience. Sadly, I don't have any cilantro today or tomatoes! It still works.
Ingredients
1/2 cup lime juice
kosher salt
1/4 cup finely diced red onion
2 Roma tomatoes, diced
1 mango peeled, pitted and diced
1/4 cup seeded and diced cucumbers
2 T minced cilantro, maybe
2 avocados halved pitted and diced
fresh ground black pepper
Preparation
Add onions, tomatoes, mango and cucumbers. Cilantro if like.
Gently fold in avocados.
Season with salt and and pepper.
Serve immediately with lots of corn chips!
For a “ceviche” add 1 lb cooked small shrimp (de-tailed)
