No Bake Granola Bites

Warning! These are highly addicting but good for you with whole grains and protein. Can make a batch of these and then bag them up - a few per each snack bag and store in the freezer. In a normal winter, these are great to eat on the lift. But for now - a great snack or dessert.




Ingredients


2 cups quick cooking oats

1 cup ground flaxseed

1 cup unsweetened shredded coconut

1 cup creamy peanut butter

1 cup mini chocolate chips

2/3 cup good honey (or Agave nectar)

2 teaspoons vanilla extract

1 tablespoon coconut oil


Preparation

Combine all the ingredients together in a large bowl until well combined. Plan to use your cleaned hands a bit.




Using a cookie scoop (and your hands) create small rounded tablespoon balls with dough, pack each ball firmly and place on a cookie sheet lined with parchment paper


Refrigerate 1-2 hours. Serve or store in the refrigerator or place in freezer to store to take to the mountain. Or eat your way through a Corona Day.
