I grew up eating pancakes we made from Bisquick. BUT it only takes a few extra minutes to pull out just a couple other items from your pantry and make from scratch. Don’t get me wrong, Bisquick is a-ok, but this is legit a lot better as my peeps would say.
Ingredients
Dry
1 1/2 cups all-purpose flour
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
Wet
1 1/2 cups milk
3 tablespoons unsalted butter, melted
2 large eggs
1/2 teaspoon vanilla
Preparation
Prepare griddle to 350˚.
Whisk together the dry ingredients in a large bowl.
In another bowl, whisk together the wet ingredients.
Pour the wet ingredients over the dry ingredients and gently whisk them together, mixing just until combined. Great option - fold in any add-ins… sweet or savory, such as cheese, fruit…. My preference is 1/4 cup of mini chocolate chips.
Spoon 1/3 cup of batter onto the griddle.
When the top of each pancake is speckled with bubbles and some bubbles have popped open, flip it and cook until the underside is golden brown.
Serve immediately or keep on oven proof platter in oven on warm (200˚). Warm up some syrup too.
Store batter for up to 24 hours.
