Laura's Summer Book Group Salad

actually from Salad Love, but Laura made it well...


Serves 4-6


It is summer, summer, summer! Can you smell the mint? Father's Day and the U.S. Open...let summer begin!




This is a classic Middle Eastern salad, Fattoush, and is a super summer salad. So simple and so good. Layer on any protein as well, but it is really just kind of perfect on its own.





Ingredients




  • 2 large heads romaine lettuce, chopped large

  • 2 Persian cucumbers, thinly sliced

  • 1 pint cherry tomatoes, halved

  • 5 green onions, chopped, include both green and white parts (I use less)

  • 5 radishes sliced thin

  • ¼ cup mint leaves, chopped

  • ¼ cup flat leaf parsley, chopped

  • ½ cup feta, crumbled

  • Several pita bread rounds cut into triangles, toasted

Vinaigrette

  • ¼ cup extra virgin olive oil

  • 2 T lemon juice

  • 1 garlic cloved smashed

  • 1 t sumac

  • ¼ t salt

  • Freshly ground black pepper





Preparation

  • Place lettuce in a large salad bowl

  • Layer the other ingredients on top – admire the beauty of a great pre-dressed salad.

  • Add half the vinaigrette and toss. Add some more and toss again.

  • Season with more salt and pepper to taste, plate and garnish with triangles of warmed pita bread.
