Serves 4-6
It is summer, summer, summer! Can you smell the mint? Father's Day and the U.S. Open...let summer begin!
This is a classic Middle Eastern salad, Fattoush, and is a super summer salad. So simple and so good. Layer on any protein as well, but it is really just kind of perfect on its own.
Ingredients
2 large heads romaine lettuce, chopped large
2 Persian cucumbers, thinly sliced
1 pint cherry tomatoes, halved
5 green onions, chopped, include both green and white parts (I use less)
5 radishes sliced thin
¼ cup mint leaves, chopped
¼ cup flat leaf parsley, chopped
½ cup feta, crumbled
Several pita bread rounds cut into triangles, toasted
Vinaigrette
¼ cup extra virgin olive oil
2 T lemon juice
1 garlic cloved smashed
1 t sumac
¼ t salt
Freshly ground black pepper
Preparation
Place lettuce in a large salad bowl
Layer the other ingredients on top – admire the beauty of a great pre-dressed salad.
Add half the vinaigrette and toss. Add some more and toss again.
Season with more salt and pepper to taste, plate and garnish with triangles of warmed pita bread.
