Summer Solstice Sweet Caroline Cocktail
It is summer solstice, and time to cue Neil Diamond. The days are long and summer has arrived. Sheltering is still a thing, along with social distancing and some masks.
Here is a great drink to enjoy while watching the first official sunset of the summer. There is a lot going on out there beyond Sheltering, and it may be worth a moment to pause and enjoy a beautiful evening with family (and friends at a distance). Thanks to my North/South Carolina contributors, namely Uncle Bill, for this drink he found just for me - my family made this drink all around the country and enjoyed together over Zoom for my birthday. You may even feel the urge to don some Carolina blue too.
(for one drink)
Ingredients
1 1/2 oz vodka
1/2 oz St~Germaine
1 1/2 oz yellow grapefruit juice
Club soda (to fill the glass)
Mint sprig for garnish (I did warn you to plant your mint for the season!)
Preparation
Combine vodka, St~Germaine and grapefruit juice in a cocktail shaker with ice. Shake well and strain over fresh ice.
Top with soda. Garnish with a spring of mint.
