Day 10 - Sheltering has continued and tonight was Mexican night. Basic tacos and our family's favorite guacamole (John's mom's recipe).
Fran’s Guac Recipe
This is an alternative guacamole recipe from Fran - no onions and no tomatoes - and it is the best. The cumin is the secret ingredient. And it must always be served with corn chips (AKA Fritos) - really - and dusted on top with grated dry jack cheese.
Serves 4
Ingredients
4 avocados
Juice from 1 to 2 lemons, about 1 ½ tablespoons (to taste)
1 tsp salt
¾ tablespoon cumin
1 clove garlic finely minced
1/4 cup grated dry jack cheese
Preparation
Mash avocado in a bowl. Add lemon juice, salt, ground cumin, and garlic and mix well to combine. Transfer to a serving dish and sprinkle with dry jack cheese. Serve with chips immediately.
If storing for later, add little lemon juice on top then cover with plastic wrap, tightly covering dip’s surface to prevent any oxygen exposure. Add cheese when serving.
Tip -Using ripe avocados is key. If yours are not ripe enough to mash, there are tricks to accelerate ripening. One method is to place the avocadoes along with a banana in a brown bag. The banana adds to the ethylene mix, expediting the ripening process.
