Tasty Shelter Party Toast

Toasts with Goat Cheese, Walnuts and Honey


So maybe this recipe was meant for a large cocktail party - which we are not having, clearly. Dang. But every night I try to make it feel like a little party (for four of us) and try to make it fun. Modify the recipe below for your sheltering party size, have a cocktail and dance to D-Nice. It makes for a good study break snack at night too.







Ingredients

  • 40 baguette slices (1/4-inch thick - about 1 1/2 baguettes)

  • 1/2 lb soft goat cheese

  • 1/2 cup honey

  • 1 cup chopped walnuts

Preparation


  • Preheat oven to 350˚.

  • Arrange baguette slices on a rimmed baking sheet and bake until golden brown - about 8 - 10 minutes.

  • Turn the slices over and bake the second side, another 8-10 minutes.

  • Remove from oven and let cool.

  • Spread each toast with 2 teaspoons of goat cheese.

  • Drizzle each with 1/2 teaspoon honey and sprinkle with 1 teaspoon of walnuts.

  • Serve right away.
