yummy basic comfort food soup
Serves 4-6
Ingredients
1 lb Italian sausage
2 large russet baking potatoes, wash, sliced in half, and then ¼ inch slices
1 large Vidalia onion
4 slices cooked bacon, chopped
½ teaspoon salt
1/4 t pepper
½ t red pepper flakes
2 garlic cloves, minced
2 c kale packed in measuring cup
1 8-oz can chicken broth
1 quart water
1 t flour or 2 t cornstarch
1 c heavy whipping cream
Preparation
Chop or slice uncooked sausage into small pieces and cook until browned and meat is ground in heavy pot over medium high heat.
Add onions, garlic, salt, pepper and red pepper flakes to sausage and cook until onions are clear.
Reduce heat to medium and add potatoes and slowly add chicken stock and water. Cook on medium heat until potatoes soft. Add flour and simmer another 15 minutes.
Reduce heat to simmer and add kale and cooked bacon and slowly add cream while stirring.
